Apoester is an oxygen-containing apocarotene compound among carotenoids. In the food industry, it is mainly used for the coloring of edible oil, margarine, jam, jelly and beverage products. In the feed industry, it is widely used in broiler poultry, especially the coloring of broiler skin, feet, fat and poultry egg yolk. It has a high precipitation rate in the target tissue and is a highly effective carotenoid additive.
The coloring principle of apo fat
• The unsaturation of conjugated double bonds in macromolecules is the chemical basis for color generation.
• The substance used for coloring absorbs a certain amount of light to produce color, and the molecular structure of the colorant determines the range of light absorption.
